Ingredients
2|ripe but firm avocados
1cupalmond flour
1/2cupgrated parmesan cheese
1teaspoongarlic powder
1teaspoonpaprika
1/2teaspoonsalt
1/4teaspoonblack pepper
2eggs
olive oil spray
Instructions
Preheat oven to 220°C (425°F). Line a baking tray with parchment paper.
Slice avocados into thick fry-shaped wedges.
In one mixing bowl whisk the eggs.
In the second bowl combine almond flour, parmesan cheese, garlic powder, paprika, salt, and black pepper.
Dip avocado slices into egg, then coat in the almond flour mixture.
Place avocado fries onto the baking tray in a single layer.
Lightly spray with olive oil.
Bake for 18 to 20 minutes until golden and crisp.
Serve warm with your favourite low-carb dip.
