Ingredients

  • 2 |ripe but firm avocados
  • 1 cup almond flour
  • 1/2 cup grated parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 eggs
  • olive oil spray

Instructions

  • Preheat oven to 220°C (425°F). Line a baking tray with parchment paper.
  • Slice avocados into thick fry-shaped wedges.
  • In one mixing bowl whisk the eggs.
  • In the second bowl combine almond flour, parmesan cheese, garlic powder, paprika, salt, and black pepper.
  • Dip avocado slices into egg, then coat in the almond flour mixture.
  • Place avocado fries onto the baking tray in a single layer.
  • Lightly spray with olive oil.
  • Bake for 18 to 20 minutes until golden and crisp.
  • Serve warm with your favourite low-carb dip.
