Equipment

  • 1 medium pot with lid
  • 1 steamer basket or large pan with lid
  • 1 blender or potato masher
  • 1 knife
  • 1 cutting board

Ingredients

  • 1 large head cauliflower
  • 3 tbsp olive oil
  • 2 tbsp fresh parsley
  • 1 tbsp fresh chives
  • 1 clove garlic crashed
  • ½ tsp salt
  • ¼ tsp black pepper

Instructions

  • Cut cauliflower into florets
  • Steam cauliflower for 8 to 10 minutes until very soft
  • Drain well to remove excess water
  • Transfer cauliflower to blender or bowl

  • Add olive oil, garlic, salt, and black pepper
  • Blend or mash until smooth
