Ingredients

  • 1 tbsp olive oil extra virgin
  • 4 chicken thighs skinless or trimmed
  • 3 cloves garlic minced
  • 150 g fresh spinach
  • cup cream light
  • cup chicken broth low-sodium
  • black pepper to taste
  • 1 tbsp lemon juice optional

Instructions

  • Season chicken lightly with black pepper.
  • Heat olive oil in a large skillet over medium heat.
  • Add chicken thighs and cook for 6–8 minutes per side until cooked through.
  • Remove chicken from the pan and set aside.
  • Lower heat and add minced garlic. Cook for 30 seconds until fragrant.
  • Add spinach and cook until fully wilted.
  • Pour in chicken broth and light cream. Simmer gently for 3–5 minutes.
  • Return chicken to the pan, spoon sauce over, and finish with lemon juice.
