Ingredients

Instructions
Heat olive oil in a large pot over medium heat.
Add onion, celery, and zucchini. Cook for 5 to 6 minutes until softened.
Stir in garlic, parsley, turmeric, salt, and pepper. Cook for 1 minute until fragrant.
Pour in the chicken broth and bring to a gentle simmer.
Add shredded chicken and simmer for 20 minutes.
Stir in spinach and lemon juice during the final 2 minutes of cooking.
Taste and adjust seasoning if needed.
Serve warm with sliced avocado and optional fresh parsley or chili flakes.
