Ingredients

  • 10 oz canned tuna drained
  • 2 medium cucumbers halved lengthwise and seeded
  • 1 medium avocado mashed
  • 1 tbsp lemon juice
  • 1 tbsp fresh parsley chopped
  • ΒΌ tsp black pepper to taste

Instructions

  • Cut the cucumbers in half lengthwise. Use a spoon to scoop out the seeds and create a shallow boat.
  • In a mixing bowl, combine the drained tuna, mashed avocado, lemon juice, parsley, and black pepper. Mix until well combined
  • Spoon the tuna mixture evenly into the cucumber boats.
  • Arrange on a serving plate and serve immediately.
