- 2 cans sardines in olive oil 3.75 oz / 106 g each
- 2 tbsp olive oil
- 1 tbsp lemon juice
- ½ cucumber
- ¼ red onion
- 1 tbsp fresh parsley
- ¼ tsp sea salt
- ¼ tsp black pepper
- 2 cups leafy greens
Wash and chop the cucumber, red onion, and parsley.
Add the leafy greens to a large mixing bowl.
Drain the sardines lightly and place them over the greens.
Add the cucumber, red onion, and parsley to the bowl.
Drizzle with olive oil and lemon juice.
Season with sea salt and black pepper.
Gently mix everything together and serve immediately.
